The real secret to stuffed burgers is using the right kind of ground meat. You need something that will hold together well on the grill. I typically use 80/20 ground beef. If you use a lean meat it will tend to dry out and crumble on the grill. You can use other meats but I don't recommend this method for ground chicken or turkey. These are difficult to work with and can cause you trouble.

Stuffing the Burgers - Making Stuffed Burgers
Now its time for the stuffing. If you are using another meat, like bacon you should cook it first. I also suggest cooking onions and mushrooms before using them as stuffing. You want your stuffing cooked through before you eat and for items like these the meat will be burnt before the stuffing is cooked. Also, onions and mushrooms release a lot of water as they cook and this will ruin your stuffed burgers so cook everything down and drain it completely before you stuff it in the burgers.

Sealing the Patties - Making Stuffed Burgers
With the stuffing on half the patties no its time to seal them up. Place the patties without the stuffing on top of the stuffed ones. To make it easier to lift these patties off the board try using a thin bladed spatula. This will help you keep the patties properly shaped.

Now it's time to grill your burgers. You want a very hot fire, but remember that stuffed burgers tend to be pretty thick and will take longer to cook than regular burger patties. Also remember that these patties can be more delicate than unstuffed burgers so be careful. A good, wide spatula is a must.

You will probably have noticed at this point that we haven't don't much to add flavor to the chicken. Now we want to start putting that flavor on and we are going to do this by basting the outside of the bird. Since I like chicken I tend to keep to simple flavors that add without overpowering. You can, of course, go with whatever you like best, but I am going to stick with the lemon and add in some rosemary.

I recommend putting the lid on the grill and adjusting the vents to the right temperature before you put the chicken on.

Make sure that the chicken is on the grill and that no live coals are directly underneath it or it can burn.

If your grill allows you to get to the fire once you have the cooking grate in place you will want to add your wood chunks now. If it is difficult to get to the fire once the grill is loaded put the chunks on the hot coals right before you put the cooking grate and chicken on. You want to have a stead supply of smoke and there is no reason to make smoke before the food is on the grill.

Flipping the Chicken - Alabama Barbecue Chicken
At our target temperature it will take the average chicken about 3 for the chicken to cook. This means that after about 1 1/2 hours you will want to flip the chicken over. If, like me you are working on a smaller grill you will want to rotate the chicken in between these times or about 45 minutes after you put it on and about 45 minutes after you flip the chicken. This will help ensure even cooking.

Traditionally pastrami is cold smoked. This means that it is smoked at cold temperatures around 60 degrees F. We will be hot smoking our pastrami and I promise you won't know the difference. Still we will keep the smoker temperature low, around 225 degrees F and smoke the pastrami for about 1 hour per pound.

You pastrami is done when the internal temperature of the corned beef reaches 165 degrees F. The outside of the meat should be nearly black and the corned beef should have shrunk down by 10% to 20%. Since corned beef is a cured meat it doesn't have to be cooked to a specific temperature but by the time the meat reaches 165 degrees F the corned beef will have absorbed all the smoke it needs and the flavor will be set.
