2011 wasn't a good year for me. I spent a couple of weeks in the hospital, had to give up catering and teaching, my father ended up in a nursing home and my mother fell apart caring for him. Italian Ox-tail Stew
Ox-tails are a unique cow part. Like the brisket and shoulder they are active muscles and well marbled with collagen (but not much fat), however, because the tail’s main job is swatting flies, unlike the shoulder and brisket it’s not a load-bearing body part. So lots of flavor and not overly tough. In addition, while the stew cooks the collagen melts and so does the marrow in the bones producing a wonderfully silky sauce.

Herb-roasted Sweet Potatoes Recipe
My sister introduced me to these herb-roasted sweet potatoes during a visit. Roasting concentrates the sugars in almost any vegetable and that's particularly the case with sweet potatoes. I prefer using a dried herb mix such as Italian herbs, Herbes de Provence, or Fine Herbes. These things are wonderful with roast pork and roast chicken.

According to popular legend, the sandwich was invented by John Montague, the fourth Earl of Sandwich who, while gambling, told his butler to put some meat between two slices of bread so he could eat without interrupting the game and getting grease on the cards. Although the tale is almost certainly apocryphal (I figure the sandwich was invented - at the latest - the day after bread was invented) it does appear that our name for this gustatory delight is taken from the earl. November 3 is his birthday and I always make a sandwich to celebrate.<
