The outdoor patio at Café ‘t Sluisje (Nieuwendammerdijk 297) is so picture postcard perfect you will find it hard to believe that you´re in Amsterdam not some seaside village. This authentic Dutch café is situated in a 16th century building in a lane of pretty dike houses in Amsterdam Noord, and named for one of the city’s oldest sluices. It offers a sun-kissed patio and shady dockside seats, all with the stunning backdrop of sailboats coming and going from Nieuwendam harbor. Take the Nieuwendam ferry (which leaves thrice daily on summertime Sundays from Central Station and stops by the café) to get there.

Because it's located at the bottom of a typical Dutch windmill, this might look like a downright tourist trap, but actually Brouwerij ’t IJ (Funenkade 7) is a real locals' favourite. Local organic beers are made in the in-house brewery, one of the last of its kind in Amsterdam. Try IJwit (a white beer), which tastes refreshing in the summer months, or one of their seasonal brews. Be warned however, their terrace is so popular on warm days you might have to sit yourself down on the canal-side sidewalk.

Indonesian food is to the Dutch what Indian food is to the British. And, like Mexican restaurants pop up in pretty much every American city, Indonesian restaurants abound in the Netherlands. In fact, the Dutch have embraced the food of their former colony as their own and are more likely to take visitors to their country to an Indonesian restaurant than a Dutch one. Rendang, or beef stewed in spiced coconut milk, is one of the most popular dishes at Indonesian restaurants in the Netherlands. This easy rendang recipe can be made in any kitchen and, like most stews, tastes even better the next day.

Smoked Salmon on Toast with Chive Sour Cream Recipe - Broodje Zalm met Bieslooksaus

Frikadellen - Frikandellen - Dutch Snackbar Sausages
Frikadellen usually come in the guise of those dodgy-looking skinless sausages that are deep fried and sold at ‘snackbars’; often as a broodje frikadel, squeezed between two cottonwool-like buns and doused liberally with mayo, tomato sauce (or its ‘curry saus’ cousin) and lashings of raw onion. Kooy’s version is grilled and slightly more grown up, served with chicory and sweet and sour ‘mustard fruit’ (cauliflower, carrots and pearl onions preserved in a mustard syrup).

Apple pie remains exceedingly popular at Dutch-style birthday parties or celebrations. These individual Dutch apple pies with apples, raisins, currants, hazelnuts and cinnamon will go down a treat. Miniature versions of cakes and pastries are always popular because they're much easier to serve than their grown-up incarnations. You can simply pop these on a cake stand with a bowl of freshly whipped cream alongside or serve on individual plates with a dollop of cream and you're done.

Boerenmeisjes - Recipe for Boerenmeisjes - Brandied Apricots
'Boerenmeisjes' (literally 'farm girls') is a Dutch regional speciality from Groningen. They're essentially apricots preserved in brandy, with a hint of lemon adding extra flavor. I think the Dutch name is as pretty as the final product is tasty.

Poached Salmon with Chive Sour Cream & Fresh Potato Salad Recipe - Dutch Salmon Recipes - Dutch Spring Recipes
Salmon is native to Dutch rivers, and although not as abundant as they once were you can catch local Dutch salmon in our rivers today. While most of the salmon we eat in the Netherlands today is either farmed and/or imported, recipes for salmon has been appearing in Dutch cookbooks since at least 1514. This recipe makes a light and modern dinner; the salmon is poached in white wine, with a bay leaf and peppercorns, and served with a chive sour cream sauce and a light, dill laced potato salad.

Mussel recipe - Recipe with Mussels
Holland is world renowned for its excellent mussels. For the uninitiated, I could only describe their taste as slightly briny, surprisingly sweet and palate-soothingly creamy. It may sound corny, but they really taste of the ocean. My dish combines mussels with the familiar (carrots and leeks) and the not-so-familiar, briny sea beans/samphire, which seem to bring out the wonderful ozone aroma of the ocean even more in the mussels.

Terrace at College Hotel Bar - Best Amsterdam Terraces - Top Terraces in Amsterdam - Best Outdoor Cafes in Amsterdam - Top terrasjes in Amsterdam
With its elegant dark color scheme, comfortable arm chairs, landscaped hedges and beautiful olive trees, the garden patio of the College Hotel (Roelof Hartstraat 1) comes as an unexpectedly intimate enclave in the moneyed museum district. While the Amsterdam Zuid (South) bar attracts a well-heeled crowd, the gravel flooring isn't particularly high heel friendly. But the delicious cocktails more than make up for that. The El Diablo, with its devilish red color and aromatic flavors is a winning longdrink (Euro 12), which combines Jose Cuervo Plata tequila, fresh lime juice, De Kuyper crème de cassis and Fever-Tree ginger beer. This cocktail may even convert non-cocktail lovers. The bar is part of the four star College Hotel, so named for its former function as a 19th-century school. The hotel bar and restaurant continue the site's tradition of developing talent, and you'll most likely be served by a hotel management student.

If boat watching is your thing, you´ll love Café-Restaurant Wilhelminadok (Noordwal 1) for its vistas of Amsterdam´s busy harbor. All´s well now, so take a ferry to the IJplein and follow the footpath to discover this IJ-facing jewel, which rather fittingly, is situated where the city´s dry docks used to be.

If you´re after the authentic brown café experience, head for Café Hesp (Weesperzijde 130-131), which has been around since 1890 and has retained most of its original features. Enjoy restful views of the Amstel from the boozer´s large river-side terrace, where you´ll brush elbows at communal tables with neighborhood locals, business people from the office complexes nearby and media types seeking out the relaxing setting and pretention-free vibe of this old-style café. The beer list is respectable, with some 20 beers on tap (try the ´Hesp Blond´, a typical Dutch white beer with a kick), but wine lovers will find plenty of quality wines (available by the glass) to please them too.

10 Dutch Food Trends 2011 - Predictions from Dutch Trendwatchers
While I always take trend forecasters with a pinch of salt (make that shaved salt this year, mind you), it's always interesting to gaze over their shoulders into the crystal ball. Some of this year's predictions seem a little odd, others were predictable and quite a few make me rather happy. I've trimmed their rather long list down to a Top 10 of the main food trends we can expect to see in 2011 and beyond.
