Continue rolling this

Cut Packet Open and Serve
Bake parchment packet according to recipe instructions. Place packet on a plate, and using a sharp knife or scissors, carefully cut a large cross on the top of the packet. Peel back to serve.

That said, risotto is well worth the time it takes, and is an impressive dish to master. The most important concept is striking the balance between creaminess (having enough liquid) and not overcooking the rice. Once you understand the basics, you can use just about any vegetable to make this dish.

Hot Broth for Risotto
Bring 4 cups vegetable or chicken broth to a simmer over medium flame in a 1-quart saucepan; turn the flame down and hold the broth on low heat.

Add the Rice
Pick a good quality risotto rice such as Arborio, Padano or Vialone. Arborio rice now grows in Italy, Texas and California and should be relatively easy to source. It's not recommended that you use any other rice for this, as the end result will not be the signature creaminess of true risotto.

Add the Wine
Add wine to the rice and stir until it is absorbed.

Add Broth to the Rice
Add cup of broth, stirring frequently until almost all broth is absorbed. As the rice absorbs the liquid, continue adding broth 1/2 cup at a time.

Continue Adding Broth As the Risotto Becomes Creamy
Add remaining broth 1/2 cup at a time, and stir until rice is al dente tender and the risotto is creamy, 20-25 minutes more. (If you run out of stock, use hot water if needed).

Finishing the Risotto
The risotto can be served plain, or you can add vegetables in the last 5 minutes of cooking. Petit peas and sauteed wild mushrooms are pictured here.Season to taste and serve immediately, using flat Italian parsley leaves to garnish. Pass Parmigiano Reggiano (parmesan) cheese alongside.
