These Thai-style fresh rolls are fun to make and so scrumptious! They are often called 'fresh spring rolls' or 'fresh summer rolls' - in other words, they are excellent served in the spring or summer, when fresh lettuces and herbs are available. They are usually served as an appetizer, but my husband and I like to make them into the main course. Lots of different fillings can be used. Here, I kept the ingredients list simple: rice noodles, lettuce, shrimp, nuts and fresh basil. Personally I find a lot of restaurant fresh rolls a little too plain tasting, so I've also added a simple dressing which the noodles and shrimp are tossed in before rolling. This dish really is fun to make - get your whole family involved in rolling them, or get your guests to pitch in. Another alternative is to have everyone roll their own right at the table - just set all the ingredients out and have a big bowl of boiling water in the center for softening the rice rolls, and you have a fresh roll party which everyone enjoys.

Swap Your Morning Joe for Thai Iced Coffee!
This Thai iced coffee recipe is made the traditional Thai way and is surprisingly EASY to do! It's a great way to use up leftover coffee from breakfast, but you can also use fresh coffee - even instant coffee turns out delicious. Here's a dessert recipe that's quick & easy, healthy, gluten-free and vegan, and yummy too! When buying tapioca, I like the 'seed' tapioca found in the baking aisle of most regular supermarkets. You can also buy 'pearl tapioca' at any Asian grocery store. Tapioca comes from the cassava plant and is a root vegetable. It grows in the ground and is nutritious enough that many Southeast-Asians lived on it during WWII when food was scarce. It contains folate (one of the important B vitamins, good for pregnant woman), and also small amounts of healthy fatty acids. Here's to tapioca, and your health!
